With our little taste of winter the last couple days I was in the mood for some soup. Kaila’s chili the night before was an extremely tough act to follow. The more I searched I kept coming back to corn chowder.
This worked well in a pinch. I didn’t have a lot of time after work so this was pretty basic. It still took me awhile to prep so next time I won’t be intimidated by additional ingredients. Here are the changes I made:
- additional salt and pepper
- 1 cup cheddar cheese
- 1/2 cup queso
- 1 tsp. of garlic (sauteed with the onions)
- at the end of cook time I blended the chowder with a hand mixer for a few minutes - it gives it that thick chowder texture
